Ingredients for 4 people:


  • 500 grams of Italian stale bread

  • 2 small cucumbers

  • 3 tomatoes

  • a tablespoon of capers

  • a red onion

  • a few salad leaves

  • a handful of fresh basil leaves

  • white wine vinegar

  • extra virgin olive oil

  • salt - pepper

In a container, pour one and a half liters of cold water and half a glass of white wine vinegar. Then, soak the bread, cut it in three pieces and let it soak for about half an hour. Immediately after, squeeze it well with your hands and put it in a fairly large bowl.


Cut the vegetables into small pieces and the salad and basil into thin strips. Slice the onion and soak it in salted water for at least half an hour, so that it loses its strong flavor and then purges.


At this point, add all the vegetables in the bowl with the wet bread - including the capers drained

from the brine - and season the Maremma panzanella with extra virgin olive oil, salt and freshly

ground pepper.
